The olives are harvested when they begin to turn darker (their colour ranges from green to purple) and taken to a temperature-controlled, continuous mill for pressing within 24 hours.
The resulting oil is stored in steel silos after a rest period that allows any impurities to precipitate.
It is bottled without being filtered. It is clear to the eye, with greenish reflections and an intense aroma and taste.
